New Year's Eve Fare

 Dear C,

You asked about our holiday menus, so I thought I would share our traditional New Year's Eve dinner. Once a year we splurge on lobster tails, frozen that is so that I do not have to bring any creature to its demise.  Happily this year we had an early "January thaw". It was 52 degrees out, all the wretched snow and ice melted and I was able to grill my lobster tales outside on our gas grill. Nothing unusual about the method, just lots of butter, however, I did pick up a handy trick from http://www.cooksillustrated.com/ By lacing the tails with a metal skewer on the flat side of the tail, you can grill them to perfection without the tails curling up. This makes it much easier to grill evenly and serve them perfectly.  We topped off our meal with a lovely glass of champagne!  Here's to a great year ahead. Cheers!
