Bird's Eye View or Orange You Glad


Hi C,


We're all thinking spring here despite the blanket of snow that covers the ground. As you know, I'm an early riser and have witnessed signs of spring in the wee small hours. The birds are singing, the owls are hooting and the geese honking its arrival. I still have trouble getting the concept that you're experiencing just the opposite down under. You mentioned soft hues of grey and taupe as showing up on Sydney's fall fashion forecast. Here we're happily unpacking boxes of color at Nextdoor. For the past two years it seemed that everything came in two shades, black or grey. This spring orange is on the horizon in all its glory, every shade you can imagine from soft corals to bright tangerines. Our customers are loving it! Course, we're pretty casual here as you know. Everything has to work back to a great pair of jeans, a cute handbag and some fun accessories. I have lots of shades of orange yarn in the studio and have enjoyed knitting up some colorful easy wraps to wear indoors now and outdoors later on. I'll keep you posted as the season progresses, but so far it looks like a colorful spring!

The seasons they are achanging

Hi there R
For a year I followed your fabulous 'One a Day' blog where you photographed designs you had created.  One of the great aspects around this was, because you photographed them outdoors in your garden and around your property, that day by day the seasons were achanging.

Day by day I watch the changing canvas 
Witness early frost brushstrokes
Falling Autumn leaves create
Bare grey branch horizon
Before fresh new snow transformation
Paints in the long long cold.


Stroke by stroke a gradual lightening
Patches of melting snow
Reveal earth's new promise
Of softer warmer times to come.
Renaissance of early spring
Heralds bright new summer.


I am wondering what the new season's fashion will be over there.  Today I browsed in one of my favourite boutiques   When I walked into the store the general hue resembled the bare grey branch horizon, with taupe and grey prevailing (our new winter stock). I actually love these rich neutrals especially when you break them up with accessories and as the sales girl said "You can treat them as black, but they are softer."

Fresh nectarines and dates in a cinnamon syrup
with roasted slivered almonds
Hi there
We had a lovely day playing host to a beautiful couple with a gorgeous new baby. 
An ordinary dessert , I thought, was appreciated and the recipe asked for. 
So here it is - of course it could be used for any fruit in season - adds a little glamour to an already fabulous fruit.

 February is my favourite time of the year for fruit - how exquisite are the peaches, plums, nectarines, and this year we also had apricots tasting almost like they did when we were fortunate enough to pick them from the tree............
Of course the best way to serve stone fruit is fresh.


But sometimes we want to serve a dessert that feels special and goes a bit beyond that. This is an in-between concept which fits that need.

Make a sugar syrup - equal quantities of sugar to water over low heat until sugar dissolves. Add a cinnamon stick, a few drops of vanilla, and a slurp of white wine if there is some available - add the stones for flavour.
Meanwhile, slice nectarines, add dates then combine with cooled syrup.
Sprinkle with roasted slivered almonds and serve with Greek yoghurt.
(roast almonds in oven for about 10 minutes at medium temperature - keep watching because they turn brown quickly)

A Chicken in Every Pot

Gourmet Granny, this is probably old news to you, but I recently discovered French Chicken in a pot! It's so easy, no basting, no mess and no dry meat! Thanks to my favorite cooks at http://www.cooksillustrated.com/ I can put on my Julia hat every now and then.

Serves 4

The cooking times in the recipe are for a 4 1/2- to 5-pound bird. A 3 1/2- to 4 1/2-pound chicken will take about an hour to cook, and a 5- to 6-pound bird will take close to 2 hours. We developed this recipe to work with a 5- to 8-quart Dutch oven with a tight-fitting lid. If using a 5-quart pot, do not cook a chicken larger than 5 pounds. Use the best chicken available, such as a Bell & Evans. If using a kosher chicken, reduce the kosher salt to 1 teaspoon (or 1/2 teaspoon table salt). If you choose not to serve the skin with the chicken, simply remove it before carving. The amount of jus will vary depending on the size of the chicken; season it with about 1/4 teaspoon lemon juice for every 1/4 cup.

Ingredients

1whole roasting chicken (4 1/2 to 5 pounds), giblets removed and discarded, wings tucked under back (see note)
2teaspoons kosher salt or 1 teaspoon table salt
1/4teaspoon ground black pepper
1tablespoon olive oil
1small onion , chopped medium (about 1/2 cup)
1small stalk celery , chopped medium (about 1/4 cup)
6medium garlic cloves , peeled and trimmed
1bay leaf
1medium sprig fresh rosemary (optional)
1/2 - 1teaspoon juice from 1 lemon

Instructions

1. Adjust oven rack to lowest position and heat oven to 250 degrees. Pat chicken dry with paper towels and season with salt and pepper. Heat oil in large Dutch oven over medium heat until just smoking. Add chicken breast-side down; scatter onion, celery, garlic, bay leaf, and rosemary (if using) around chicken. Cook until breast is lightly browned, about 5 minutes. Using a wooden spoon inserted into cavity of bird, flip chicken breast-side up and cook until chicken and vegetables are well browned, 6 to 8 minutes. Remove Dutch oven from heat; place large sheet of foil over pot and cover tightly with lid. Transfer pot to oven and cook until instant-read thermometer registers 160 degrees when inserted in thickest part of breast and 175 degrees in thickest part of thigh, 80 to 110 minutes.




.2. Transfer chicken to carving board, tent with foil, and rest 20 minutes. Meanwhile, strain chicken juices from pot through fine-mesh strainer into fat separator, pressing on solids to extract liquid; discard solids (you should have about 3/4 cup juices). Allow liquid to settle 5 minutes, then pour into saucepan and set over low heat. Carve chicken, adding any accumulated juices to saucepan. Stir lemon juice into jus to taste. Serve chicken, passing jus at table.

Happy Valentines Day to you all out there - I have to say that I empathise with you today knowing that it may not be easy to surprise and express love considering all the expectations.
Hugh Mackay on love - 'Love' must be the most flexible word in the English language..... So what kind of love do we desire?  Romantic, erotic, altruistic, parental, sacrificial, familial, material, ethereal, companionate, divine?     Those and more.  Love in all its varieties and manifestations, lights us up. Love has the power to enlarge the spirit; to bring out the best in us; to encourage a greater openness to others and to inspire us to perform acts of kindness.  Love comforts us, reassures us and boosts our confidence  in ourselves.

Thanks Hugh - I'm sure you won't disappoint your loved one.  But for others out there, a couple of helpful hints from Clara.
  • Whilst I know you don't fall for the commercialisaton of the day, and your loved one may have assured you that she doesn't want anything at all, it is a brave man  who heeds that request -
  • Having said the above, what women want more than anything else is to feel that they are special, and this doesn't necessarily mean material trappings.  To just take time out of your day to turn off the TV, hold her hand, look into her eyes and tell her how you feel about her should do the trick.  Yes G this may mean not playing Squash tonight
  • and flowers are a nice touch.
