Wrapped in Roasted Vegetables



Roasted Vegetable Wrap at the Boatshed at Balmoral is a favourite, their version including roasted pumpkin, eggplant, onion, beetroot, leafy greens, and falafel.
Hints of Moroccan are suggested in the following version, where roasting the vegetables brings out their natural sweetness and preserves their rich vitamin and mineral content. These vegetables are also wonderful as a side dish - a good idea being to cook more than you need and use the leftovers for the wraps. The Yoghurt Sauce is a useful option to add interest and flavour.


Yoghurt Dressing
To 1/2 cup thick yoghurt add 2 tblsp chopped mint, 2 tsp chopped mint, 2 tsp honey, 2 tsp ground cumin.



Ingredients:


1 medium eggplant cut into 3cm / 1in chunks (sprinkle with salt, left for 20 mins, rinse and pat dry)
500 g / 1lb pumpkin cut same size as eggplant
1 red capsicum, seeded & cut into chunks
1 red onion - sliced
2 tbsp olive oil
Sea salt and freshly ground pepper to taste - (or Cayenne Pepper)
2 teasp each cumin and paprika (or use a commercial brand of Moroccan seasoning)
1-2 cloves crushed garlic
2 teaspoons chopped fresh coriander / and or mint / and or basil
2 handfuls green leaves such as baby spinach or rocket and extra fresh herbs to serve
4 large tortilla wraps (thin)
Instructions:
Preheat the oven to high. Arrange the coated vegetables in a single layer on two baking sheets and coat with the garlic, oil and spices. Roast until the vegetables are tender, about 20 minutes. Fold in the spinach or rocket.

To assemble the wraps, spread 1-2 tbsp. of the yoghurt over each tortilla, enough to thinly cover one side of the bread completely. Next, divide the roasted vegetables evenly between the tortillas. Roll up the wraps, starting at the bottom. To keep the filling from pushing forward, keep pulling the rolled part toward you; this also helps to make a firm roll.
Serve toasted, with leafy greens.

Be Like Water & Flow - the video

A little philosophy from the Eastern sages, 'Right living is like the water, which of all things most yeilding can overcome that which of all things is the most hard' (Old Tai Chi philosophy).
Water , despite it's softness, is so strong it can wear away the hardest rock, if it patiently and persistently dripped onto it. So the Inevitability of Gradualness principle 'that if we see our goals clearly, patiently and persistently, and despite all obstacles, work towards those goals, we will achieve them.'

It's good to take a viewing point, rather than a point of view.

Today, I took my camera to Georges Heights  -  nestled amongst Sydney Harbour National Park, "Mosman Barracks offers the discerning business owner a unique opportunity in an unparalleled location. This centre offers fully refurbished heritage buildings with polished timber floors, state of art communications facilities, A/C and excellent staff support. Site amenities include long day childcare centre, tennis courts, bushland walking and running tracks, easy access to Clifton Gardens and Balmoral beaches and restaurants and cafes." 

A friend of mine rents one of these buildings, and whenever I am there,  it feels like I am on the top to the world; with a view to everywhere in this fabulous city, to which I am luring you.


Today was a most magical day - the kind of day you would like to put in a bottle, preserve and bring out when you need a lift.  The Autumn sun warm on my back, the air not quite crisp but without the usual humidity of summer, not a sign of smog over the city - the kind of day when you .............. I think I feel a song ...

So I took photos to show you - most  of  the photos I send to you are within walking distance of home ie Mosman, so I call them 'A walk around the Block'.  It would be good, too if you could smell  Gumtrees as I did (close up photo) and taste the Frittata I ate at The Barn, and feel the peace and tranquility.
Whenever I can I include a park bench in my photo, and invite you to sit on it and view my world as I do yours.  To end with filosophy - 'It's good to take a viewing point, rather than a point of view'.

This space reminded me of your studio, the Niddy Noddy.  I talked to the artists there today with an idea of housing my beautiful loom from Wisconsin there but they are as short of space as I am.   The studio next to it is about to be rented for $1000 per month - it would be ideal for us - come over now, you here!
